More jerk for dinner

This time the jerk turns up in a frittata. Sweet and russet potatoes, onions, bell peppers, eggs, sour cream, chopped jerk chicken and cheese.

Tip:  using precooked taters makes it easier and faster. Just dice and warm through when other veggies are done.



This is my favorite leftover dish. It takes minutes to get together and a 30 minutes to cook. There is a second tip for this dish.

Tip:  user a blender to beat the eggs.  Add the sour cream into the the blender.  Blend til eggs and sour cream are blended well. This will give you a very smooth custard like dish. It doesn't fall as much when it starts to cool.
