Lovely weekend!

I didn't get out this weekend but it was so nice here at home.  

Except Trixie.  She is a little under the weather so she was cuddly all weekend.  Lady was jealous that Trixie was getting all the attention so she was cuddly all weekend!

Sunday, Charles got up, cooked lunch and cleaned the kitchen!

One of our faves is The south western slaw we had here. It is Paula Deens and I posted the recipe on March 13th. I hope you like it!

Sorry Mercy, I can't do the Jalapenos, my stomach is very sensitive to certain spices...as a result I can't eat Mexican foods or extreme chili's. I have to back down on the chili when I make mine and go more for a sweet taste as apposed to a spicy one. Also, I can't do real southern BBQ...to much vinegar. Drats, I miss all the fun. Any other recipe for coleslaw? lol, jobabs

I do make a more traditional southern coleslaw. It has sour cream instead of mayonnaise. so, it needs to be made in small batches.
in this I use napa cabbage because it is a more gentle flavor and texture.

shred 4 cups of napa cabbage
Slice into rings 1/2 one medium sweet onion.
1/2 cup sour cream
1Tbs lime juice
1/2 tsp salt
2 tsp sugar

combine all sauce ingredients. stir into veggies until coated. add more or less sauce as you like.

This is crispy and crunchy with a smooth, sweet, low acidity sauce.

Mix up a few hours before serving to get the most flavor.

Wanted to tell you I tried your baked spaghetti dish substituting mozzarella for the cheddar. I really liked it, however my only complaint is that it was kind of dry after baking (I like a little more sauce on my spaghetti)...so what I think I will do the next time is when it's time to put the cheese on top before I do, I will add a little more sauce and see if that fixes the problem for me. It had just the right amount of spices and so...no stomach problems..lol. Thanks for posting that recipe. Love, jobabs
