life long friends

The great thing about life long friends is they know you so well.  The bad thing about life long friends is they know you so well!

My friends suspected that I didn't use store bought seasoning blends in my Chicken and Rice.  Several of them called me on it.

Ok here they are!

Creole is the milder of the 2 seasonings.  It has a slight kick to it.  Cajun seasoning is a whole different critter.



Mercy's Creole Seasoning

1 tsp chili powder
1 tsp smoked paprika
1/2 tsp ground oregano
1/2 tsp ground thyme
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp cayenne powder 

Measure into a small dish.  Stir. This makes enough to season 1 or 2 dishes.  

If you would like to keep some on hand double or triple the recipe it will keep for months if store in an air tight container.


Mercy's Cajun Seasoning
Warning:  HOT

1 tsp hot paprika
1/2 tsp jalapeno powder
1/2 tsp cayenne powder 
1/2 crushed red pepper
1 tsp dried red bell pepper ground
1 tsp dried tomato ground
1 tsp garlic powder
1 tsp cumin

Stir together in a small dish.  Enough for 1 or 2 dishes.

The heat in this blend can be adjusted by manipulating the level of peppers.  It can be doubled or tripled as needed.


Many, or in some places all, of the spices may be hard to find at the local grocery.  I use My Spice Sage.com, an online vendor.  Their product is great.  The variety is amazing.  And no shipping fees.  Better quality than the grocery any day.
