Shrimp and potato dinner

Love tonight's dinner.  Shrimp slowly poached in butter and black pepper.  Potato casserole made with bacon and 2 cheeses.

Like most casseroles I make this one starts with a buttery white sauce. I toss the cooked potatoes with crispy chopped bacon, a couple tablespoons of bacon fat, diced sharp cheddar cheese and shredded mozzarella.  Once they are tumbled together I pour in the white sauce.  After working this mix into the corners of a square casserole dish, I topped it with bread crumbs and slid it into a 375 degree oven to bake for 30 minutes.

Warm a sauté pan just enough to melt 3 tablespoons butter.  Once the butter is melted add cracked black pepper. Turn it up to a low simmer.

Gently add the cleaned shrimp.  Being careful not to over cook the shrimp poach until the  flesh is just opaque and pink. Garlic butter on the side for dipping.
