Charles has been talking about pork tacos for a week. He was bummed it rained yesterday.
Today, rain or shine pork tacos were a go. He bought boneless country style ribs. Rubbed them down with cumin, oregano, brown sugar, chili powder, salt and pepper, granulated garlic. Marinated over night.
A slow smoke this morning and we were ready to eat. Fresh salsa and the traditional toppings on corn tortillas.
Man alive! That was just an astounding taco. YUMMSTER!
