Hot weather dinner.

 A hot dinner in the dog days of summer is not recommended.  So early this morning I started on a 'chilled' dinner. Curried Carrot Soup.

This morning, before the coolness had burned off, I boiled sliced carrots in broth until tender.  About 20 minutes or so. At the end of the boil time I added half a teaspoon of curry powder and a 1/4 cup sugar or Splenda. Ending with a few tablespoons of cream.

After cooling in the fridge for several hours I whizzed it up in the blender. Once silky and smooth I returned it to the refrigerator until dinner time.


There it is Chilled Curried Carrot Soup. It thickens slightly in the cold.  But it's still luscious and richly flavored. Just right for the end of a sweltering day, I think!
