Such lovely loin chops!

I can not figure out how to make an inch thick pork loin chop to come out tender and moist. It's a good thing I don't have to. Charles, the brother, nails it every time.

Smoked loin chops potato salad and cole slaw.  Super summer supper. I LOVE this!  

After surgery I am on mostly protiens and the few veggies my system can handle.  Thankfully cole slaw is very digestable for me. Charles loves it too. Win win!
