A little dinner on my own

It has been months since I have been able to cook on my own.  I think there was only one other dinner I did on my own.

Last night it was frittata. Breakfast frittata, sausage, potatoes and cheese. It was a hit!


It was so SO good!  But it needed a side.  Roasted fall veggies. Sweet potato, onion, parsnip, carrots, butternut squash and vegetable oil. Roast at 400 degrees until tender.


I didn't add any sugar to the veg.  When they roast all these vegetables tend to sweeten a lot.  They did just that. I was so happy with both dishes. 

It was a good result for being so out of practice! Yummster!!
