Look what i ordered!

In recent weeks I have been searching for a farm that ships pork belly.  Girls and boys I think I found the cream of the crop. Heritage Farms, Cheshire Pork. 

Heritage Farms are an all natural operation. No antibiotics. No steroids. No chemicals. It also means that they care tremendously for the health and happiness of their animals.

They have bred and raised their own piglets for 37 years. It shows!

Look at what arrived at my door!  Pork belly!  There will be bacon!

I don't know if you noticed but this whole pork belly hangs off both ends of my sheet pan! I can not wait! 

We will cure it for a while. 7 to 10 days. Then with friends and family we will smoke it.  Sounds like a party to me!!!
