Pimento Mac and cheese.

I love pimento cheese.  I use it to make grilled cheese. I use it for a dip. I have been known to put it on a bacon burger.  Ooooh! It’s great on biscuits.  I had never put it in my Mac and cheese.

I guess the only thing to do when entering unknown territory is jump in head first. Ok. . . Geronimo!!

The thing about the unknown is things can surprise you. I thought I would just add my pimento cheese to my Mac and cheese bake and it would be great. Uhhhh. . .nope.

I couldn’t taste the pimentos. I added more and more and more! Two whole jars it took to get the right flavor.

Once I got the recipe right I decided I needed a big batch! Hee! Hee!
