Veggie Breakfast

My breakfast is usually coffee and yogurt.  Sometimes leftovers call to me all night long.  It was one of those nights.

Someone the brother was working with had an over abundance of butternut squash.  He sent Charles home with a whole bag of of the squash.

I peeled a large one. Diced it and boiled it until just tender.  After draining off the water I tossed the squash with butter, salt and pepper.  So so good.

I got up craving the leftovers.  Loved it!
