Experiment: Mummified Beef

Saturday Charles came home with 4 BEAUTIFUL rib-eye steaks. Two went into our "steak house dinner" that night.

Griiled steak, baked potato and an iceburg lettice.



We saw a 60 second how to video from Americas Test Kitchen.  We used the second pair of steak to experiment with dry aging.


The simple 4-day aging is just wrapping with cheese cloth stow on pan with a rack.  The rack is to allow the air to circulate when it is all placed in the back of the fridge.
                                                    



These are our beef mummies!  Can not wait til they ripen.
