Chicken tacos in the crock pot

Dinner last night was crock pot chicken tacos with Latin slaw.

I find I prefer my taco meat in a salad or in lettuce cups.  So I use Romain hearts as taco shells.

Crock pot chicken taco

1 whole chicken 3 to 4 lbs
1 small jar red salsa
1 small jar green salsa
1 cup white wine
1tsp cumin
1tsp chili powder
1tsp cayenne, or to taste
1 tsp garlic powder

Dump all ingredients into crock pot.  Cover and cook on low 12 hours. You also cook on high for 6 to 8 hours.  


Remove chicken from pot and let cool.  While chicken cools move liquids to a large sauce pan and reduce to half.  


When chicken is cool take off the bone and shred.  Return chicken and reduced sauce to crock pot set on warm. This will make sure the meat stays at the optimum  temp all through the meal.


Serve with favorite wrap and toppings.
