Oxtails for the first time



A while ago the brother bought some oxtail. Never having cooked them before we froze them til we could figure it out.

I needed some thing I could just put in the oven to slow cook while I rested. So yesterday I braised the oxtail. Browned the meat to make the beefy flavor more prominent.


Then in a rich liquid of dry sherry and beef broth I braised them in a 325 degree oven for 3 hours. Tender and juicy in a lovely gravy they were a hit!


I think Charles had three helpings. . . Not that I was counting. With winter squash it was a nice dinner.
