Pita fail. . . Again

 I had a baking morning today. The loaves of bread were great. See. . 

That's a good looking loaf of bread. Right?

My pita pockets did not puff up. So I have a halfway decent flat bread. Meh.  But not a pita pocket.

Look. . . 

Good flavor but no pocket.  They aren't as burnd as they look.  

Some one please tell me.  What am i doing wrong? RATS!!!!
