Chewy Chocolate cookies & Mema's Coffee Cake.

I promised a friend these recipes. One is a great chocolate cookie. It makes the best ice cream sandwiches. The other is my Mema's coffee cake. It made for the best food memories! I hope you like them!

Chewy chocolate cookies

1 1/4 cups butter, softened
2 cups sugar
2 large eggs
2 tsp vanilla extract
2 cups all purpose flour
3/4 cup cocoa
1 tsp baking soda
1/2 tsp salt
1 cup chopped pecans

*Beat butter at medium speed with an electric mixer until creamy; gradually add sugar beating well. Add eggs and vanilla, beating until well blended.

*Combine flour, cocoa, baking soda and salt. Gradually add this mixture to the butter mixture. beating on low speed until well blended after each addition. Stir in pecans.

*Shape dough into 1 1/2 inch balls and place on a lightly greased baking sheet. Bake at 350 degrees for 18 to 20 minutes. cool in pan 1 minute, remove to cooling rack.

Makes 20 cookies




Mema's coffee cake is a jazzed up cake mix. It is also a never fail recipe.. It works every time and it always is a hit! Disregard the directions cake mix box. Mema had her own.



Mema's Coffee Cake.



BATTER
1 Duncan Hines butter recipe yellow cake mix

 1 small package instant vanilla pudding
4 large eggs
1/2 cup vegetable oil
1 cup sour cream
1 stick butter, softened


TOPPING
1 cup light brown sugar
1 cup roughly chopped pecans
3Tablespoons cinnamon


* preheat oven to 325 degrees. HEAVILY grease a 9X13 pan or 12 inch spring form pan. There is a lot of sugar in this recipe and it will stick if you do not butter well or line with parchment paper.

*in a mixer beat butter until creamy. Add eggs, vanilla, sour cream and oil. mix for 2 minutes.

*Add cake mix gradually on low speed. once all the cake mix has been added beat on high speed for another 2 minutes. This batter will be heavy. Set batter aside and mix the topping items in another bowl.

* in the prepared pan spread half of the topping mixture. Pour all of the batter in top of this. Spread out evenly in the pan. Sprinkle the remaining topping over the batter.

*using a butter knife swirl the topping into the batter. not all of it will blend in that is ok. you want to see some of the topping .

* bake for 1 hour to 1 hour ten minutes. When a toothpick comes out clean it is done.

Mema never iced this cake but I think its deserves one so here it is.

Drizzle

2 cups powdered sugar
1 tsp vanilla
4 TBS water or milk

Mix.

If it is too thick to drizzle add a little more liquid.
Too runny add more sugar. Drizzle over cooled cake
