crock pot cooking

I have been a crock pot cooker for decades. . . and for the most part I am very happy with the out come. However, when I want bolder flavors they seem hard to achieve with long slow cooking. Even hot spices and peppers seem to loose their zing and become a whisper of their flavor.

Recently I have been experimenting. I have discovered that increasing the a mount of flavor in the beginning is NOT the answer. You need the flavors in the start to build your base. You also need the same profiles added again in the last 45 to 60 minutes of cook time. This is particularly true with curries and oriental flavors. Try it. you will be blown away by the difference!!
