No bake/no sugar blueberry cheese pie


I love blueberry deserts but they can be very hard to get right. This is my favorite no bake type pie.

Crust:
1 whole package Murry's sugar free sugar cookies ground into fine crumbs
1/2 stick melted butter or margarine
1/2 cup slpenda

Filling:
2 8 oz packages cream cheese softened
1/4 cup sour cream
2 Tbls lemon juice
1/2 cup splenda
1/4 cup milk

Topping:
3 cups frozen blueberries,
1 1/2 cup water
1 cup slpenda
1/4 tsp. nutmeg
1 Tbls tapioca

mix crust ingredients and press into an 8-inch pie pan. bake in 350 degree oven for 10 minutes. set aside to cool.

mix filling ingredients and spread into the bottom of the cooled pie crust. Place in refrigerator until topping has cooled to room temp.

in a sauce pan warm topping ingredients over medium high heat stirring often until the liquid starts to bubble. When the topping bubbles stir constantly until the mixture has thickened. Remove from heat and allow to cool completely. When topping is room temp, pour over the cooled filling and return to fridge. cool for at least 2 hours.

This is best served cold. enjoy
