Italian Scramble

Years upon years ago a friend would make special eggs for me every time I visited.  She called it her Italian Scramble.

Eggs, ricotta cheese, parmigiana, basil oil and parsley all beaten together.  This makes a creamy almost custardy scramble. So luscious! 

I remember her husband telling me the he enjoyed my visits because she made 'anniversary' scramble when I came for the weekend. Lol!
