Down home frittata

I love a frittata.  Italian style or not.  This I call my Down Home Frittata.




Sautéed squash with bacon and onions.  Cheddar, ricotta, potatoes and eggs poured in.  



The style and flavor of this dish reminds me of southern Sunday dinner.  Smoky and cheesy  in the best way. The aroma and taste of squash coming through in each bite.  Yummster!
