Guinness Bread
Starter
1/2 cup Guinness
1/2 cup bread flour
1/2 tsp yeast
Dough
3 cups bread flour
1.5 tsp yeast
1 cup water
1.5 tsp salt
Mix the starter. Leave the bowl with the starter loosely covered on the counter over night. It should be bubbly and smooth.
Next day mix starter with the remaining items. Knead by hand or mixer for ten minutes or until smooth. Let rise until double in size. Depending on temp and humidity it can take from 30-90 minutes.
Deflate by folding the sizes into the middle. Form into loaf and rise til doubled. The same time parameters apply.
Slash the top. Put into preheated 350 degree oven. Bake 20 minutes baste with melted butter return to oven and bake 20 more minutes.
Cool ten minutes in pan. Then cool on wire rack for at least thirty minutes. Cooling for two hours would be best. Slice and serve.
Tip: the best knife for slicing fresh bread is an electric knife. Yes, the one you use to carve turkey once a year. This way the knife does the work. Will not crush even the freshest loaf.
