Brisket for B.L.
I posted my crock pot brisket recently. A friend has asked me to share the recipe. Ok B.L. here it is!
3 to 5 pound Brisket
3/4 cup beef stock
1 cup dry sherry or red wine
3 medium white onions peeled and quartered
3 large carrots, peeled and chopped into 2 inch pieces
3 stalks of celery 2 inch chop
2 Tablespoons of Worcestershire sauce
Spices: garlic and onion powder,#1 salt and pepper to bring out the rich beef flavor.
I change the spices by which style I’m cooking. To the base above I add...
Tocos = cumin & chili powder
Italian = Italian seasoning
1 1/2 Tbs corn starch stirred into quarter cup water opt
1 1/2 Tbs corn starch stirred into quarter cup water opt
First brown beef on all sides. While browning prepare veggies and put in crock pot.
Sprinkle 1/2 the spice blend over veggies and stir.
At this time all the liquids and stir again.
Lastly sprinkle all the remaining spices on the browned brisket. Place on top the veg in crock pot.
Place the lid on. Set on low for 7 hours.
Then remove the brisket to a waiting platter. Surround with the best looking veggies. Remove last 2 cups of veggies to a blender. Whizzzzzzzzz! When the veg are mostly puréed stop.
A little chunks is always a good thing. Pour the purée into a 2 or 3 qt sauce pan.. add two cups of pan juices to the same pan.
Bring up to a simmer. If the texture is not right add. . . If too thick, add simmering water , too thin pour in cornstarch slurry.
As always taste, taste, taste! Salt and pepper will be different in each part of this recipe. Spoon some over the meat and veg. Serve the rest of the sauce on the side.
