I love spaghetti squash!

The squash that resembles spaghetti is my favorite. Just salt, pepper and a little butter has been my go to. Until this weekend.

This weekend I served the squash with a home made basil oil. Perfect match!  They compliment each other so well I won't serve the squash any other way from now on.


The slight sweetness of the squash plays right into the sweet basil.  

The basil was picked fresh from Charles earth box. Then simmered for 15 minutes in a nice olive oil. I strained it through a coffee filter in a fine sieve. 

Even weeks and weeks later the oil tasted of fresh basil.  With the roasted squash it's wonderful!
