Chicken Alfredo pene

A quick special dinner for Charles. Smoked chicken Alfredo. Mmmmm!


A family fave.  Restaurant style alfredo is only three ingredients. Butter, cream and parmigian cheese.

As with a lot of things the technique is crucial.  Melt one stick of butter in a small pan. Add one cup of heavy cream. Stir until incorporated.  Add slowly a cup of freshly grated good parmigian. Continue stirring until all the cheese has melted.  If the first cup of cheese doesn’t give the thickness you wanted add cheese a little at a time until it thickens well.

I ran out of the good parm and had to use the parm in a canister.  This is packaged with stabilizers.  So it doesn’t melt as creamily.  

I usually run the sauce through a fine wire mesh to smooth it out. I forgot to strain it. RATS! It’s a little grainy. But still very tasty!
