Vichyssoise vs Charles
Vichyssoise wins! I got a little too heavy handed with the garlic for Charles but other than that we have a winner!
So creamy! Potatoes, leeks, milk, cream and chives. Refrigerated for several hours. Topped with crumbled bacon.
Rounded out with quick bread and butter pickles. Minus the garlic the brother was very pleased.
I'm pleased too. It's creamy and rich. Two of my favorite flavors! Yummster!
2 pounds red potatoes peeled and chopped
1 small leek washed and chopped
3 Tbs butter
3 cups milk
1 cup cream
1 tbs chives chopped
Salt and pepper
In a large pot simmer the first four items. When the potatoes are tender pour into a blender or food processor. Blitz until smooth. It may take two batches to get all the product smooth.
Place in the fridge too cool. Just before serving add the cream, chives, salt and pepper. The texture should be like a loose pancake batter.
I top my vichyssoise with bacon bits. What is better than potatoes and bacon.
