Challah again
Yesterday I promised you the recipe to the Challah. The recipe I used was adjusted for a bread machine 2-pound loaf.
Challah:
3/4 cup warm water
2 eggs, beaten
1 1/2 tsp oil
1/4 cup honey
3-4 cups of bread flour ( Start with 3 cups. add a little more at a time. Just til dough comes together. It will be very sticky)
1 1/2 tsp sugar
3/4 tsp salt
2 1/4 tsp yeast or one packet
egg wash:
1 egg
1 Tbs milk or cream
Load bread machine as directed in instructions for your bread machine. Set for dough only. The machine will take the dough through its first rise.
Remove dough to a prepared surface. (With very sticky dough such as this I spray the work surface and my hands with a non-stick spray. They dough is much easier to work with. and easier to clean afterwards) Divide dough into 3 equal balls cover and let rest for 10 minutes.
After resting roll each ball into long ropes. (16 t0 19 inches) Press the ends of ropes together and braid as you would a childs pigtail. Place braided loaf onto a parchment covered sheet pan. Paint with egg wash.
Let rise 1 hour, covered. During this time let oven preheat to 400 degrees. At the end of rest turn temp on oven down to 350 degrees. Bake loaf at 350 for 25 minutes.
Check temperature of loaf with an instant read thermometer. 185 to 195 degrees is optimum. Remove from oven to cooling rack. Cool completely.
Eat.
