Bacon Jam: The Recipe
Charles came home early. He tested the bacon jam via a grilled cheese. Natures Own whole wheat bread, Cabot's extra sharp white cheddar and my bacon jam.
He has proclaimed it 'REAL good!' So the recipe follows.
Bacon Jam
1 1/2 cups diced bacon
2 sweet onions diced
2 cloves garlic grated
2 Tablespoons red wine vinegar
1/3 cup brown sugar
1/2 cup water
1/2 tsp crushed red pepper flakes
In a heavy pan render bacon on medium low heat.
Remove all but 2 Tbs bacon fat.
Add onions and garlic. Continue to cook until onions are wilted. About 10 minutes.
When onions are translucent stir in sugar, vinegar, water and pepper flakes.
Reduce until very thick
Cool and put in one pint jar.
