Cool dinner
The temps here are already in the low to mid 90's! So, cool dinners are the order of the day. Today I am making a chilled carrot soup.
It is easy peasy.
2 Lbs of carrots, peeled and chopped
2 TBS chopped onion
1 clove garlic minced
2 tsp sugar
3 cups chicken stock or veggie stock if you prefer
1/2 cup cream or half and half
1 teaspoon curry powder
salt and pepper to taste
put first 5 ingredients in a large sauce pan and simmer until veggies are tender. Add curry powder and simmer for 5 more minutes. remove from heat .
Allow to cool completely. Then puree. A stick blender or a food processor work well for this. If you don't have either of these machines a potato masher works really well. (builds your muscles too! ;) ) If you use the potato masher the end product will be a more rustic texture.
salt and pepper to taste
stir in cream
refrigerate until dinner time.
Serve with garlic toast and a green salad.
