Cottage Pie

I have always found shepherd's pie or cottage pie to be an excellent way to remake leftovers.

You can use anything for the filling. I have used nearly every meat and or veggie known to man as a base. However the leftovers I had this weekend can only be called accidental genius. I was faced with about 1/2 pound of pulled pork.

Now no matter who you are that particular ingredient does not scream cottage pie. But I disagree. . . now. I say now because i had to seriously talk myself into this.

Pulled pork cottage pie

1/2 Lb pulled pork
1/2 Lb smoked hot pork sausage, kielbasa style, sliced
1 cup of BBQ sauce, your favorite
1 tablespoon tapioca pearls
1 medium onion diced
1 cup frozen butter beans
2 tablespoons minced garlic, divided
4 med potatoes cooked til just tender
3/4 cup grated cheese
butter
cream
salt and pepper

in a pan with a couple teaspoons of oil add onions, butter beans and 1/2 the garlic. saute til butter beans are fully cooked. About 10 minutes or so. The pan may dry out. just add a little water and keep cooking.

When the veggies are ready add the sausage cook until done. Then add pork. mix the tapioca pearls with the BBQ sauce and add to the pan. This will thicken slightly. Pour into a greased 1 1/2 quart casserole.

While the filling cools add butter, cheese, cream, the other half of the garlic and salt and pepper to the potatoes.
Mash til creamy.

Pour potato mixture over the filling and smooth to cover the top. bake in a 375 degree over for 30 minutes. The potato crust will be golden brown.

This makes enough for the 2 of us for dinner. If you have more to feed it can be doubled or even tripled without much problem.
